Big Bounce

I bought a groupon for a nearby bounce house. We lucked out and it wasn't crazy busy and the "farm" was completely empty so in we went.

At the Park

This past Friday morning I took Molly to the park for a little while before it got too hot.

Freezer Cookin' 101

Last summer I was preparing for Molly when I filled my freezer and I enjoyed that feeling that knowing I could pull something out and have quick meals on hand so I decided to fill the freezer again this summer.

I started by pulling all the meals we enjoy & weeded through to figure out which ones I could freeze. This is what I came up with. From the list of recipes I jotted down the ingredients I'd need for each recipe & then totalled them up (how many lbs of chicken, how many cans of cream of mushroom soup, how many roasts etc.) to create my final shopping list. Don't forget a box of Heavy Duty Freezer bags.

I shopped. Molly napped through the trip to HEB so that helped me get in and out of the store in less than 45 minutes & I only spent $142.21 which made 24 meals, 1 side dish, and a batch of garlic cheese biscuits.

I had some help getting the ground beef into the pressure cooker & chicken breasts into some boiling water. She also helped me label each bag with the name of the meal and any cooking instructions.

After the meat that needed to be cooked was done I started getting the ingredients for each recipe into their own bag. I laid them out flat on a baking sheet in my freezer so they'd take up less space in the deep freeze.

Duck Duck Duck....

So I took Molly down to the pond by my dad's office so we could feed the ducks. Which was quite an adventure. I'm sure I'm probly the only mom in the history of the world who swears at ducks infront of her child but those ducks were CRAZY!! (Maybe the ducks remember me from high school when a bunch of friends and I chased them up the hill) Anyway to say the least I don't think Molly's into ducks that aren't made of yellow rubber.

Date with Daddy

Summer time is especially busy for Rustin. Yesterday he actually got home about 3 which is a nice change from 10:30. So we after a quick bite to eat at Longhorn Saloon we took Molly for her first icecream cone.

This was followed by a quick trip to "the toy box", a cute little you shop near the icecream place. Molly got a few new things. Her favorite seem to be her new stacking cups.

Summer Book List

One of my favorite things to do at the start of each summer is to get my book list together. Who knows if I'll actually have time to read this summer but just in case here's my list.
