Wednesday Weigh In...on Thursday

Favorites
With Cinco de Mayo being this week I was really in a margarita-y mood. With this mix you only have to "pay" for the points in the liquor. I'll take a 4 pt margarita any day.

Read about this one on Hungry Girl and finally found it. So yummy!

All about a "free" dessert. Jello has some really great flavors out right now. I guess JELL-O is gettin' ready for summer too.

Tips & Tricks

This website has such a great layout for a family/team challenge. It's more about getting motivation from those around you and devloping healthy habits than loosing weight but I'm excited to start this. If you wanna join me just print it out & play along starting June 1st

Recipes
Tamale Casserole
Ingredients:
1 cup shredded reduced fat Mexican cheese blend, divided (I used Weight Watchers brand)
1 (14.75 oz) can of corn, drained
1 (8.5 oz) box of corn muffin mix
1 can of Bush's Grilling Beans Black Beans, drained
3 chicken breast
1 pkt Taco Seasoning
1 can chicken broth

Place chicken breast, taco packet & chicken broth in crockpot on low for 6 hours. Shred. Bake corn bread according to box. Add canned goods to chicken and stir. Pour on top of cornbread. Top with cheese. Bake until melted.

Wednesday Weigh In

Favorites

Subway is my new go to for breakfast! I like the steak, egg white & cheese the best.

I was skeptical but holy cow these are dang awesome! They taste like a real chip. They come in a couple flavors & you can eat 15 for only 1 pt. WHOO HOO!

This turkey pepperoni is fewer points than others and tastes just as good. Yummy with a cheese stick for snack time.

Smartones has a new appetizer. They're stinkin' great! Remind me a little of Cheesecake Factory's tex mex eggrolls, only BBQ-y.

If I can't make it to Jazzercise for some reason this is the workout I've been doing in my living room. It's great because you don't need anything to do it.

Tips & Tricks for this week
To make sure I'm getting enough water I snatched this idea from pinterest. It's actually working really well!

I ran out of baggies this week and was looking for a better way to keep track of all my snacks. This is what I came up with. The entire container is only 6 points. (String cheese, pepperoni, almonds, & Cracker Chips.)

I started following this great blog and the things she's had to say the last few days have really made a difference to me. Check her out if you'd like.

Last but not least, next week is Teacher Appreciation. Every year parents volunteer to bring us breakfast and lunch each day of the week. SO KIND, RIGHT!!??!! This year I'm dreading it just a little for the simple fact that I want to stay on my WW track. So I passed word to one of the room moms that I was on WW and hopefully I'll be able to stick to my guns next week.

Recipe
5 point Bean & Cheese Nachos
20 Guiltless Gourmet Baked Chips
1/4C FF refried beans
1/4C FF Shredded Cheddar Cheese
Layer beans and cheese on chips to make nachos. Microwave or Bake until cheese melts.

Weigh In Wednesday

The favorites for the last few weeks have been...

WAAAYY better than diet sprite!

Holy cow! Supper yummy & very filling for only 6 points!

19 of these babies for only 3 points and they're really a pretty good size too.

This may have already been a favorite before but they are again this week. Only 6 points for a GIANT piece of fish. LOVE IT!

I built a new board on PINTEREST this week of quotes and such to keep me motivated. Here are a few of my favorites in leu of a recipe.

Wednesday weigh in

So this weeks isn't so much about favorite products. Its more about my favorite ways to make the Weight Watchers program easier. It's a lifestyle change not a diet. So here are my tips for making it a little easier to stay on track.

Have your own space. I have a basket in my pantry and a drawer in the fridge that are just for my foods. They have points one them and are organized to I can just grab and go. I also pre bag everything thats not already in single servings. Grapes, pretzels, dry cereal, everything. I make enough bags to last for one week.

Prepare ahead of time. I've found that if I figure out what I'm wearing to work the night before it makes dressing so much easier each morning. I thought the same concept might work for getting me to my workouts each evening. I used a basket and put each workout outfit including socks and hair bands for the week inside.
And a little motivation after each workout is a powerade zero. I like the blue the best. It's a little treat for actually going to workout.

Recipe of the Week
Italian Spaghetti Squash
Cut your squash in half lengthwise. Remove all the seeds & Bake for 45 min. at 375. Pull out sides with a fork. This is when it will shred and start to look like spaghetti. Use 1/4C of the1/3 Less Fat Italian Cheese & Herb Philadelphia cooking creme. Top w/ 1T of shredded parmesan cheese. It's AWESOME! I wont say it tastes like pasta but it pretty darn good.

Wednesday Weigh In

Favorites for this week are....

These little marshmallows are awesome! They give just the sweet you need in something like a trail mix or in SF hot cocoa. Don't expect them to be soft though, they're more like the marshmallows in a bowl of Lucky Charms.

7 of these babies for only 5 points. I was worried at first that since they are gluten free that they'd taste gross but oh no they rock!

My new jogging stroller is a favorite this week & here's the app I've been using to help keep me on track.

Last but not least are the shells & cheese. They're 5 points but I've been eating half of the serving with the fabulous little nuggets for lunch & it makes it feel like a real meal. Even if it looks like the plate belongs to a 4 year old.

Recipe of the Week
Glitter Grapes
1 pound of seedless grapes, pulled from the stems and rinsed
1 3-oz. package Sugar Free gelatin, flavor of your choice (NOT prepared)
Water

Spread the jello mix on a plate, about 1/4 at a time. Rinse the grapes under water, and place a handful on the plate. Shake the plate gently to roll the grapes in the gelatin, coating the grapes. Place coated grapes into a bowl. Repeat until all of the grapes are covered. Place the bowl and let set in the refrigerator for about 1 hour, until the gelatin is set.

I found this online (through Miss Heather) but I remember making these in the past and they were awesome and still are!!!

They make it Look So Easy

You know who I'm talking about, those ladies running down the street pushing their kid in a jogging stroller. They're not sweating, they have perfect hair & make up. Their outfit looks like it walked off the pages of a fitness magazine & to top it all off they're talking on the phone & pushing the stroller with ONE hand.

I am NOT one of those ladies.

This Saturday morning for no reason I checked Craigslist for garage sales with jogging strollers. There was one right around the corner from us and they had 2 strollers to choose from for $40 each. After I finally found the garage sale (the post failed to mention the address & they didn't post any signs-made it kinda hard to find) I hauled my fabulous purchase home.

I got it cleaned up & it took me about 15 minutes (with the help of my sweet neighbor Stephanie) to get Molly strapped in. Only to find out that all three tires were in badly need of air. So we post-poned our madien jog until Sunday.

Sunday afternoon I geared up with my fancy filtered water bottle, my new performance socks & and an old ADPi t-shirt (reason #1 that I am not one of "those" ladies) We took off at a pretty reasonable pace according to my awesome new app and that would be the first of many times I ran Molly right off the sidewalk. (REASON #2)This continued for about 25 more minutes. So I tried to use one hand thinking that might make it easier to steer. (reason #3) WRONG! In the end we both survivied but it was defintely a challenge. See play by play text message(during my multiple water breaks) to Miss Heather below.

Forgive the language. It was hard. Either way I hope if you were in one of the cars driving by and have ever thought about running w/ a stroller I hope I gave you a little bit of courage that you don't have to be one of "those" ladies to do it.

**UPDATE**
Apparently there was an issue with my alignment that was making it hard to steer. My fabulous hubby fixed it and the 2 mile run went much better on day 2! Still super hard workout though!

Resolution Update

So I made some resolutions here and just wanted to share my progress.

Only 10 lbs left until pre-Molly weight so yay there. But what I was really excited about was my ring of prayers. Sometimes I just don't know the "right words" to say and these little cards help me keep my thoughts organized. I took the prayers from 25 PRAYERS FOR MY HUSBAND and 31 WAYS TO PRAY FOR YOUR CHILD and tweaked them a little bit. Then I used these printables to dress 'em up a little bit. I printed them out and stuck 'em on a ring. Now they're hanging in my car.

Wednesday Weigh In

These are super yummy and only 1 point! I love it. I'm using them for wrapinis (see more below) and tacos, qusadillas, and so much more!

Not the most delicious bread in the world but 3 slices for 2 points I'll take it! Overall I was surprised, it tastes pretty good and w/ 1/2T of PB and SF jelly life is good! I'm having visions of super low point French toast with SF syrup this weekend.

Must admit this is not a favorite from this week but it is a goody from past WW days. I remembered this already cooked grilled chicken strips on my way home from work one afternoon and will definitely be picking some up this week for next weeks lunches. Great over salads w/ strawberries & Mandarin oranges or in a fajita bowl or a wrapini, or anything really.

These cheese snacks are in the same category as the last "favorite", to be honest i'm not even sure if they make them anymore but they were a great alternative to cheese sticks. Plus they come in lots of fun flavors (just like laughing cow does now)

In order to better monitor my water intake I bought a gallon (my goal per day) and had planned to just use it refill my super-dooper fancy water bottle that Rustin got me for Christmas. Let's just say a gallon is a lot and it
s taken me 4 days to drain this one. I'm workin' on it though!

This last "favorite" isn't a food. It's something I came up with to help keep myself on track when I'm feeling like I'm about to make a poor food choice. I looked up 6 or 7 Bible Verses about weight loss. Then I used PICNIK to type them out onto the pictures. I uploaded them to Walmart and picked them up the next day. Now I've got one of these cute little buggers on the fridge at work and the pantry door.

I went to Jason's Deli this past weekend with my mom and I'm now really into "Wrapinis", if you couldn't already tell. Just a wrap that I press using my handy dandy panini maker. It only takes a couple extra min. and it makes a regular ol' sandwhich a little fancy. I made 2 of them this past Sunday and then put them in the fridge. I just nuked 'em for about 15 seconds when I got to lunch on Mon. & Tues.

Recipe of the Week
FROZEN PEANUT BUTTER CUPS
8oz tub of FF cool whip
3T peanut butter
1/4C SF chocolate syrup
Mix peanut butter & coolwhip. Spread into 8x8 pan. Drizzle with chocolate syrup & freeze over night.
12 servings = 2 WW points
