If you can't stand the Heat...

During the school year I take meal planning a little more seriously than in the summer. It's just too stinkin' hot here to bake/cook etc. so we spend most of our evening meals grillin' out with friends. The men-folk usually handle the meat/man food part but theres always room for dessert. Here are 4 recipes that I've made for our cook outs so far this summer that are super simple and the best part....no baking!

Strawberry Icebox Pie



1 box of graham crackers
1 container of cool whip
Chocolate sauce
1 large container of strawberries

In 9x13 pan make a layer of graham crackers. Top with a layer of cool whip. Slice strawberries and layer ontop of cool-whip. Continue layers, I usually get about 3. Top the last layer of strawberries with chocolate sauce if desired.


Smores Treats



3 C Golden Graham cereal
2 T butter
1/4 C chocolate chips
2 C Marshmallows (set aside a handful)
Chocolate sauce

Microwave marshmallows and butter for 1-2 min. Mix cereal. Spread in a 9x13 pan. Top with chocolate chips and reserved marshmallows. Drizzle with chocolate sauce. Chill for 2 hours.


Peaches and Cream Pie



8 oz cream cheese
1/4 C brown sugar
1 T vanilla
7 Diced peached
1 graham cracker pie crust

Mix cream cheese with brown sugar and vanilla. Fold in peaches. Pour into crust and chill 2-3 hours.


Smores Truffle



1 Microwave chocolate lava cake (prepared according to box)
1 box chocolate pudding (prepared according to box)
2 C marshmallows
1 tub of cool whip
1 C chocolate chips
2 C graham cracker crumbs

Place microwaved cake into the bottom of truffle bowl. Top with mini marshmallows. Add layer of prepared pudding. Top with graham cracker crumbs. Top with chocolate chips. Finally add layer of cool-whip.

**If you're thinking that all these pictures look too good to have come from my kitchen you're right! They're from pinterest...my desserts were gone too fast to get a picture of them. :)
